Recipe Corner

This is the inaugural edition of the recipe corner - new recipes will be posted as they become available, stay tuned.
These will be "runner friendly" recipes, with the emphasis on low fat, carbohydrate and nutrient rich fare.
Submissions will be very welcome.                                                                        Chile

Chicken Chili

 2 1/2 cups water
1 tsp      lemon pepper seasoning
1 tsp     cumin
4 ckn breasts; bone or bonelessChicken
1 tsp olive oil
1 garlic clove, minced
1 cup chopped onion   
2-9 oz can /frozen white corn   
2 cans of green chilis or jalepeno - to taste
1 tsp cumin
2-3 tbs lime juice
2-3 cans canellini beans

Combine water, lemon pepper cumin and bring to boil.  Add chicken and simmer until done.  Take chicken out and cool.  Keep juice, skim out unwanted foam out of the juice.  Shred chicken into pieces- return to juice.  Put a little olive oil in a frying pan,  saute garlic & onions- add to chicken mixture.  Pour in corn, chilis/jalenpenos, cumin, lime juice . Bring to a boil. Add beans last.  Heat through and serve.
